Stay Well During Holiday Seasons

Holiday gatherings mean special people, special foods and lots of temptation to indulge. But you can keep everything under control with a plan.

  • Start your day with a small meal that includes whole grains, fruit, dairy foods and protein like eggs, ham or peanut butter.

  • Have smaller snacks throughout the day, saving most of your calories for the main meal.

  • Don't starve yourself beforehand. The longer you go without eating, the more you eat when you sit down.

  • Select carefully: foods you definitely will eat, those you will sample and those you will skip.

  • Include vegetables and fruits on your plate.

  • Be smart on beverage choices. Limit alcohol, soda, and juice.

  • Enjoy yourself. Pace your eating and spend more time visiting with family and friends.

  • Take a 30-minute walk after your meal with family and friends.

Recipe of the Month: Tofu with Chives and Beef

Ingredients

  • 1/2 teaspoon soy sauce or low sodium soy sauce
  • 1 teaspoon wine or sherry
  • 1/2 teaspoon sugar
  • 1/4 pound lean beef
  • 1 pound firm tofu
  • 2 tablespoons chives, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried black beans, mashed
  • 1 teaspoon oyster sauce
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1/4 cup water
  • 1/2 cup water
  • 2 teaspoons peanut oil
  • 1/2 teaspoon chee hou sauce

Preparation
Slice beef thinly and marinate in first three ingredients for 15 minutes. Cut chives into 1/2" pieces. Cut tofu into 1" cubes and set aside. Mix cornstarch with 1/4 cup water and set aside. In a hot wok or skillet, add 1 teaspoon peanut oil. Stir-fry garlic for 30 seconds. Add beef and stir-fry for 1 minute or until brown. Remove from wok and set aside. Add peanut oil and stir-fry tofu. Stir-fry for 1-2 minutes. Add black beans and chee hou sauce. Stir-fry until tofu is browned. Add 1/2 cup of water and oyster sauce. Bring to a boil. Add chives and cornstarch mixture. Bring to boil for 1 minute. Add beef. Mix thoroughly for another 30 seconds. Serve immediately with rice.
